She Put the Lime (and Cherries) in the Coconut

Summer isn’t over! If you want to try a delicious, refreshing cocktail that’s perfect for summer, this one will hit the mark!

INGREDIENTS:

(will make 2 cocktails)

  • 1 Lime
  • 1 Fresh Coconut
  • 1/3 cup Coconut Simple Syrup
  • 12 Cherries
  • Coconut Tequila

PREPARATION:

Drill holes into the coconut’s eyes. If you don’t have a drill, just stick them hard with an awl or knitting needle. Whatever works.

Empty the coconut water into a bowl and set aside.

Pit 10 cherries and then muddle them.

Cut a lime in half. Remove one slice from each half (reserve for garnish). Squeeze the juice from both remaining halves.

COCONUT SIMPLE SYRUP:

Put 1/3 cup of the coconut water and 1/3 cup of granulated sugar into a small saucepan. Bring to boil. Set aside and let it cool.

RECIPE:

Add the following to a cocktail shaker:

  • 3 Tbsp. Coconut Water
  • 3 Tbsp. Coconut Simple Syrup
  • 1 Tbsp. freshly squeezed lime juice
  • 10 pitted and muddled cherries (we use Michigan cherries)
  • 2 oz (or 3 if you’re a lush) Coconut Tequila

Fill the cocktail shaker with ice. Shake it like a polaroid. Strain into a glass rimmed with shredded coconut, add a slice of lime and cherry and enjoy!
